Cauliflower & yellow lentil curry with coconut

This cauliflower & yellow lentil curry is very easy to make and doesn't cost a lot either. It uses lentils with crisp cauliflower seasoned with yellow curry spice paste and coconut. Easy and healthy!

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 4 garlic cloves, crushed
  • Thumb-sized piece root ginger, finely chopped
  • 3 tbsp curry paste
  • 200g yellow lentils
  • 1 ½ litres vegetable stock
  • 3 tbsp unsweetened desiccated coconut
  • 1 cauliflower, broken into little florets
  • Cooked basmati rice
  • A small bunch of fresh coriander
  • Mango chutney and naan bread (optional), to serve

Method

This cauliflower & yellow lentil curry is simple to make. Start by heating the oil in a large saucepan, then add the onion, garlic and ginger. Fry for around 5 mins, then add the curry paste, then stir fry for 1 minute before adding the lentils, stock and desiccated coconut. Bring the mixture to the boil and simmer for around 40 mins or until the lentils are soft (add more water as necessary).

When the lentils are almost done, add the cauliflower (normally during the final 10 mins of cooking). Cover and simmer for 5-10 minutes or until cauliflower is tender-crisp. 

Spoon rice into bowls, top with the curry and sprinkle with the coriander leaves, and coconut if you like.

Serve with mango chutney and naan bread (optional).
