Chorizo & mozzarella gnocchi bake

A gnocchi bake, covered with chorizo and mozzarella is perfect as a warm, comforting meal for dinner. The soft gnocchi, surrounded by a rich tomato sauce, with crispy bits of chorizo all baked under a blanket of bubbling golden mozzarella! Sign me up!!
Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 120g chorizo, diced (see note for Veggie option)
- 2 x 400g cans chopped tomatoes
- 1 tsp caster sugar
- 600g fresh gnocchi
- 125g mozzarella ball, cut into chunks
- A small bunch of fresh basil, torn
Method
If you want to try making this Chorizo & mozzarella gnocchi bake, follow the below stages.
Stage 1
Heat the oil in a medium saucepan over a medium heat. Pour in the chopped onion and fry for 6 minutes. Then add the crushed garlic and continue frying for another 4 minutes.
Stage 2
Add the chorizo pieces and fry for 5 minutes more. Pour in the tomatoes and sugar, then season. Bring this mixture to a simmer, then add in the gnocchi and cook for 8 minutes, stirring often, until it’s soft. Heat the grill up high.
Stage 3
Stir ¾ of the mozzarella and most of the torn basil through the cooked gnocchi. Pour this cooked mixture into a baking dish. Sprinkle over the remaining mozzarella, then grill for 3 minutes, or until the cheese has become melted and golden.
Stage 4
Season, scatter over the remaining basil and serve. This chorizo & mozzarella gnocchi bake goes perfectly with a simple green salad as an aside.

Notes
Chorizo slices – As a Vegetarian, I used Linda Mccartney Chorizo Sausages which I chopped up into small pieces.
