This Easter Biscuits recipe is easy to make. They're a perfect little treat to enjoy with a good cuppa during the Easter Weekend.

Ingredients

  • 100g butter, softened
  • 75g caster sugar + extra for sprinkling
  • 1 egg, seperated
  • 200g plain flour
  • ½ teaspoon mixed spice
  • ½ teaspoon ground cinnamon
  • 50g currants
  • 25g mixed candied peel
  • 1-3 tablespoons milk

Method

If you want to try making this easy Easter Biscuits recipe, follow the below stages.

Stage 1

Pre-heat the oven to 400°F/200°C/180°C (Fan). Lightly grease 2 baking trays.

Stage 2

Measure the butter and sugar into a bowl and cream together until light and fluffy. Beat in the egg yolk. Sift in the flour and spices and mix well. Add the currents and mixed peel and enough milk to give a fairly soft dough.

Stage 3

Knead the mixture gently on a lightly floured surface and roll out to a thickness of 5mm. Cut into rounds using a 6cm biscuit cutter. Place on the prepared baking trays.

Stage 4

Bake in the pre-heated oven for about 8-10 minutes. Remove from the oven, brush the biscuits with the lightly beaten egg white, sprinkle with a little caster sugar and return to the oven for another 4-5 minutes or until pale golden brown. Lift on to a wire rack and leave to cool.
